After a few delays and some dark days, Pizza Republica is finally opening at 4 p.m. today at 5375 Landmark Place in Greenwood Village.Here’s how the Jet Entertainment Group, which also owns the Jet Hotel and Nine75, describes its latest restaurant on the company’s website:
“Pizza Republica focuses on homemade cooking using local and organic produce whenever possible. The marinara, mozzarella, pizza dough, and desserts are all made in house. Pizza Republica’s bar serves over 20 wines by the glass and over 100 by the bottle, including both well-known and eclectic selections. There is also a large selection of draft and bottled beers. Obvious artistry prevails over mass production at Pizza Republica, and no matter which pie ends up on your table, you & your friends will leave with a feeling of utter satisfaction!”
