Peter and Mara Soutiere, owners of Boulder’s Tahona Tequila Bistro and Sushi Tora, have big plans for the small spot they recently took over behind Tahona — even if those plans have been slightly delayed. The pair had originally planned to open the Pearl Street Steak Room in in late summer — but they are now looking at October 10, says Kate Linehan, spokeswoman for Pearl Street Steak Room, Sushi Tora and Tahona. Linehan blames the delays on building permits, though she says all alcohol plans have been approved.

Despite the late start, though, the owners haven’t had to make changes to the concept.

When the thirty-seat steak spot does open, it will offer a menu of steaks and sides that will change on a daily basis in a space designed to feel like a private, intimate parlor.

Linehan says the owners and their chef, Matt Tobin, are busily putting together the opening-week menus as construction forges ahead.
