When Louisville’s Viceroy of India changed over to Delhi Darbar, not much changed — the Indian restaurant served up the same menu as its predecessor, albeit under a different name. But even with a fresh moniker, the owners couldn’t make Indian food work in that location, and Delhi Darbar closed its doors last year.
The address didn’t stay vacant for long, and a group of Italian partners soon took over the address and began putting together Parma Trattoria & Mozzarella Bar, giving the space a fresh look — and a dining room centered around a fireplace — as they prepared to open the doors.
“It’s a new concept,” chef and owner Silvio Cuomo explains. “My other partner, Marco [Monnanni] owns Bacco in Boulder, and we created a new mozzarella bar.” That mozzarella bar, he explains, is serving up several different imported and housemade cheeses and cured meats from Italy; he cites burratta, prosciutto from Parma and a housemade mozzarella in particular.
But Cuomo, who hails originally from Naples and spent the last six years working behind the burners at Parisi and Firenze e Tavola in Denver, says that cheese and meat is just the beginning. “I like to mix a little bit of everything,” he explains, adding that he trained as a chef and pizza-maker in Naples. Pizza, therefore, is also on the menu, as are many pasta dishes — including a lasagna from Parma — a raft of seafood and several Italian entrees. That board pairs to an Italian-centric wine and beer list as well as a full bar.
