Distilling has been exploding in the Rocky Mountains, and we’ve added enough distilleries in the last few years to just about stock an entire bar. Further proof (no pun intended) of this phenomenon: another vodka-maker is getting ready to enter the market, specifically on Larimer Street.

Mile High Spirits — owned by Joe Vonfeldt, who is also the distiller — has leased a 9,500 square-foot facility on 30th and Larimer Streets, and he’s in the process of building out the facility. Details remain sparse on exactly what spirits will come from the spot, but vodka is definitely on the docket.

In addition to liquor, Mile High Spirits will also give the neighborhood a new restaurant. The distillery’s Facebook page teases that an eatery with a full bar and patio will have a different menu theme every day, citing pizza, gyros and hot dogs as examples.

Liquor license and permits have been secured, and a tentative opening date — January 2012 — has been set.
