With the mountains and plains of Colorado drier than a tinderbox, the best way to get Rocky Mountain high this summer could be to sip a Blue Sky Martini inside the cool, cavernous Blue Sky Grill. Made with Skyy Vodka and Blue Curacao and served straight up with a lemon rind in a chilled martini glass, the bright-blue bomb ($7.25) tastes about a thousand times better than a can of warm beer — and the Western-themed eatery is a lot more comfortable than a collapsible chair. Housed in the Pepsi Center, and inspired by Stan Kroenke’s Q Creek Ranch in Wyoming, the Blue Sky Grill is Kroenke’s multi-million-dollar baby. The kitchen serves hearty, meaty fare like bison chili and buffalo steaks; the restaurant’s open daily from 5 p.m. to 11 p.m. Visitors get free parking on non-event days, and you might even spot some recently drafted Nuggets relaxing in their brand-new digs. Throw in a few martinis, and it’s off to the wild blue yonder.
