In Grease, the Pink Ladies ruled the school. Denver gals who want to follow their lead after work should snag a table on Rialto Cafe’s patio and order up a Pink Diamond Martini. Named for a legendary 1920s silent-movie palace, the Rialto is the coolest spot to see and be seen on the bustling 16th Street Mall. It’s also the perfect place for the well-polished: The food is elegant with a touch of Asian spices, and the sophisticated art-deco interior buzzes most nights with an eclectic mix of downtown dwellers and professionals, theatergoers and travelers just passing through. The Pink Diamond ($6.25) simply buzzes. Made with Absolut vodka, peach Schnapps, pineapple juice, cranberry juice and a lemon-rind twist, the drink is served straight-up in a chilled martini glass. “The ladies like to drink them because they taste fruity and are really easy to slam,” says manager Michele Gibson. Rizzo and Frenchy would be proud.
