Tony Cherry Creek, that swanky enclave full of chic boutiques and restaurants where stilettos and furs far outweigh flip-flops and fleece, is seemingly — inexplicably — becoming a Mexican-food mecca.

Machete, a subterranean joint, opened in Cherry Creek in 2011, and it’s been slammed ever since with a congregation of taco and tequila fiends, and then, last year in April, a second outpost of Margs Taco Bistro (the original location is downtown) took over the former Einstein Bros Bagel plot at 200 Fillmore Street. That space, too, has a full house on most nights — thanks, in part, to its potent margaritas.

And now there’s a third Mexican spot opening in Cherry Creek, just adjacent to Machete (bet they’re happy), in the former Bisque space, which opened in November of 2011 and shuttered just seven months later.

Ay Caramba!, a restaurant whose banner pimps several different beer and spirit brands, is taking over the two-tiered quarters, located at 2817 East Third Avenue, and according to that same banner, it’ll dispense Mexican street sandwiches, which can only mean one thing: tortas!
