We’ve got high hopes for The Pinyon, 1710 Pearl Street in Boulder, which wowed us so much with its fried chicken just two days after it opened, it earned a coveted spot on our 100 Favorite Dishes roster.
The Pinyon has been open since mid-December for dinner, but chef/owner Theo Adley had anticipated adding lunch and late-night hours as soon as he could, so tomorrow, the doors will open at 11 a.m. for lunch, and a late-night bar menu, which runs from 10 p.m. to close, Thursday through Saturday, was added to the lineup last week.
The lunch menu features lighter options, like a smoked trout salad, tomato soup with grilled cheese and a housemade pork terrine sandwich in addition to more sizable entrees, like the skirt steak and pork sausage, from the dinner menu. And yes, you can get fried chicken at lunch, too.
Leorah Young, the spot’s manager, says that weekend brunch will begin in a few weeks.
