Pam Read has owned Goddess Catering, a local catering business, for a few years — and when Satchel’s Market vacated its digs in Park Hill (the owners relocated to a spot next to Oliver’s market, where they created Satchel’s on 6th) — she jumped at the chance to expand into a full-fledged restaurant.

So she picked up the lease and applied for a liquor license. Now she and her cousin, Gary Fink, are putting the finishing touches on the remodeling and gearing up to open Pary’s on 28th.

“I’d describe our menu as modern American comfort food,” explains Fink, citing such dishes as brick chicken — a slow-cooked lemon-herb-spiced strip of poultry that is seared quickly and then finished on the grill under a brick — as well as a bone-in ribeye and tacos de cabrito, made from goat.

That board will undergo seasonal changes, too. “This summer, we’ll have a vegetarian lasagna with white bechemel sauce,” he says, noting that updates will come as the months come.

The owners will also offer nightly specials at their dinner-only spot, like a Sunday roast and enchiladas every Friday; all that will pair with wine and beers on tap, as well as cocktail specials, says Fink.

The restaurants will be outfitted as a neighborhood bistro, which the owners hope will take on the ambience of a lively dinner party, serving from 5 to 9 p.m. Wednesday through Saturday. And it should be quite a party when Pary’s opens on June 22.
