It’s not easy finding Laotian food in Denver, as Laura Shunk discovered after her recent return from a trip to Southeast Asia. On the hunt, she dropped by Edgewater’s US Thai, which has an owner from Laos, a chef who’s cooked all over Thailand, some seriously hot food, and lots of fans, like Glenn, who posted this:

Nice to see the US Thai review. I’ve spent quite a bit of time working in Thailand. This is the closest I’ve found to authentic here in Denver. And, yes, hot means hot. When I walk in, they have a beach towel waiting for me to drape over my shoulders to wipe off the sweat.
