Trios Enoteca, the cavernous wine bar and live jazz venue that’s held a brick-fronted piece of real estate on Wynkoop for nearly fifteen years, has dried up, shuttering last week after a series of closing parties.
The spot won’t be dark for long: Zydeco’s, a Cajun restaurant, has picked up the lease, and it will open in the same address in just three weeks.
Andrew Esparza — who is also involved with Fleur Bistro, which opened earlier this year — is the managing partner behind the new venture, and he’s brought on hospitality man Ron Angotti and executive chef Sydney Moore to bring his concept to life.
“It’ll be a typical Cajun menu, and we’ll have specials that’ll include roasted alligator,” Angotti explains. A sample lunch menu also includes buttermilk-fried chicken, jambalaya, stuffed catfish and, delightfully, beignets.

The crew is currently giving the old Trios space a makeover, and Angotti says they hope to start serving lunch and dinner by Wednesday, September 7.
