That tiny hut, tucked into a courtyard on Vine Street at the Streets at SouthGlenn, is the future home of Yo’Cheese, a takeaway stand “making grilled cheese the way you wished your Yo’Mom made,” its Facebook page promises.
“It’s a fun little project for my kids more than anything,” says owner Ernie Brooks, who’s never been in the restaurant business before. “They think it’s fun that they’re getting sandwiches named after them.”
True to its name, the spot will feature a menu of six to eight varieties of made-to-order grilled cheese sandwiches plus, of course, tomato soup. “We’re making the soup fresh daily using quality ingredients,” Brooks explains. “And we’ll have some other stuff that we experiment with on a weekly basis.
The small space is currently being outfitted with kitchen equipment, and Brooks says he hopes to be open no later than February 1.
