Taki’s Japanese Restaurant & Sushi Bar has been a mainstay on East Colfax for years. But Hisashi Takimoto, who opened it as Taki’s Healthy Japanese Food Restaurant in 1998, passed away in 2009, and the restaurant has gone through some changes since then. Now there are more under way: A sign on the door explains that the spot is undergoing maintenance and will reopen on September 4.

Taki, who was born in Japan, moved to Colorado in the late ’70s to work for a restaurant in Vail. After that, he worked in a series of restaurants and bars in Boulder and Denver, and finally opened his own place, Golden Tempura Bowl, in 1990. In 1998, he moved his restaurant across Colfax and renamed the place Taki’s.
