The former Boulder Draft House space sat empty for months, until restaurateur George Hanna decided to pick up the lease and open Los Oasis Latin Grill & Cerveceria, an upscale spot with a menu inspired by southern Mexican — particularly Oaxacan — cooking, and a name that resurrects memories of Hanna’s old Oasis.
The new Oasis opens today for dinner (lunch will be added soon), with a board boasting mole, nopal, prawns and plantains, paired with a couple of house-crafted beverage options, which will expand once the place gets the brewing system fully up and running.
“Right now, we’ve got our Cabo Gold on tap,” says Josiah Richmond, the general manager. “It was satellite-brewed up in Estes.” The bar is running four guest kegs until the rest of the lineup is ready, which should be in two to three weeks.
Los Oasis is also making its own blue agave tequila-like spirit; the silver is done and should be available next week. “Our reposado and añejo still need to age,” Richmond notes.
